Make yourself a dang quesadilla!
This is one of our favorites. Not only is it delicious, it's fairly quick and definitely easy.
That meets all the requirements in my book!
Pollo Grande Quesadillas.
adapted from Worldwide Ward Cookbook: Mom's Best Recipes
1 large chicken breast, diced into bite-sized pieces
1 medium onion
fajita seasoning
1 red and 1 yellow bell pepper
1/4 cup sour cream
4 oz cream cheese
3 or four slices of jalepeno, seeds removed
4-6 tortillas
about a cup of shredded colby jack cheese
avocado, diced
Season the chicken and onion with fajita seasoning to taste, then cook in oil on the stove, until the chicken is done and onion is tender. Meanwhile, prepare the peppers in a smaller skillet until crisp-tender; add to chicken and onion, cook another minute or so and remove from skillet.
Blend the sour cream, cream cheese and jalepenos.
Place a tortilla in the skillet, fill with chicken, onion, and peppers. Add 2 teaspoons of sour cream mixture, a handful of cheese, and a few slices of avocado. Fold tortilla closed, cook until cheese is melted and tortilla is browned, flipping once. Repeat with rest of tortillas until ingredients are gone. Eat till you can't hold anymore.
