In the Kitchen.

We've been eating a lot of pizza around here lately.  I think it's a combination of cravings and the fact that it's so dang easy.  I'm all about easy.  This one was super yummy and super easy.

Chicken Pesto Pizza


(Sorry, these aren't the prettiest pictures in the world.)


You will need:
One pre-made pizza crust (I used Boboli).
2-3 Tbl of butter, melted
Garlic powder
Pesto (Bunch of basil, 2 handfuls of pine nuts or walnuts, garlic clove, 3 Tbl Parmesan cheese, olive oil--enough to blend smoothly; combine all in blender).
1 chicken breast, cooked. (I diced my chicken, seasoned it with garlic powder, Italian seasoning, basil, and lemon pepper, then fried in a skillet.)
Shredded Mozzarella cheese
Shredded Parmesan cheese


To assemble:
Mix melted butter and garlic powder to taste.  My hubby loves his garlic, so I used more than your average individual might.  Spread your garlic-butter onto the pizza crust.  Spread the pesto on top of that, then evenly distribute your bite-sized chicken pieces on top of that.  Sprinkle with Mozzarella and parmesan cheeses.  I would be liberal with it.  I enjoy my cheese.  Bake in pre-heated oven at 400 degrees until the cheese starts to get all golden and bubbly.

In other news, last week I found my first stretch marks.  They're just hangin' out by my belly button (which is nearly non-existent).  So hopefully those fade.  I'm still using my cocoa butter religiously every morning.  Also, my fingers and feet have started swelling, so I'm kind of anti-shoes at the moment.  And I switched out my wedding ring for an adjustable ring I found in my jewelry box.  It's gold with dolphins on it.  I don't want my wedding ring to get stuck on my finger, but I don't want to walk around ring-less and have people assume I got knocked up out of wedlock or something.  By the way, our baby girl is supposed to be here in less than six weeks.  ...I should probably get to work on that whole baby room deal.  And maybe invest in a stroller and car seat.  And maybe figure out how to take care of infant.  You know, the important stuff.

Haha I love you Lauren!!! It's so crazy that you'll have a baby next month....I can't wait to see what she looks like!

This is one of those learn on the job deals - taking care of baby. But you can do it - after all you turned out just fine and your mom learned after you were born just as I did with her when she arrived - though I did have a little practice with a couple of boys ahead of her! Isn't this exciting? I can hardly wait to see this little sweet baby...

yes- but at least I practiced some on some cousins- poor Jason ended up with a diaper on backwards once, but hey at least I didn't do it to Lauren :)

Pretty sure Grandma Carr put Spicer's diaper on backwards one time when they came to visit us in California.
